Hello everyone,

Who does not know this little cold appetizer, the baba ghanouj of Lebanese cuisine, a recipe for Middle Eastern cuisine based on easy and quick eggplant.

Baba ganoush can be eaten as a cold starter, an easy meal to accompany pita bread, or an accompaniment to grilled meats, roasts, fries and fish.

The baba ghanouj that can be found in French appellation under several spellings:

baba ganoush, baba ganouj, baba ghanouch, baba ghanoush, babaganouch, babaghanouj and so on.

Just to keep the proper pronunciation of the Arabic name of this delicacy and cold dish: بابا غنوج.

Knowing that the closest spelling to pronounce the name properly is baba ghanouj, we pronounce the “gh” as an “r”, so if you want to pronounce this name correctly, you just have to say: baba ranouj (not with a rolled R of course)!

Baba ghanouj is an eggplant caviar prepared in the oriental style, adding tahini.

Is eggplant hmiss the same as baba ganoush?

My mother always prepared the recipe for eggplant caviar for us, but we didn’t call this salad back then eggplant caviar, it was just a hmiss badhinjan or badenjal which means grilled eggplant salad.

In summer, this recipe and the recipe for hmiss with grilled peppers, which we tasted deliciously with a good matlouh or baguette bread.

The first time I had tasted this baba ghanouj, it was at my friend, the Sudanese Sherine.

At first glance I had recognized the delicious eggplant caviar, but when I tasted it, I knew the difference.

There was this taste that I didn’t know, but that I still liked.

Sherine had prepared a platter of mezewhich we call English Mezze platter, how beautiful and rich in composition, there was:

  • falafel
  • hummus
  • green olives and kalamata olives
  • herb feta
  • tabbouleh
  • Tzatziki
  • stuffed vine leaves
  • cherry tomatoes and cucumber and celery sticks
  • and pita bread

I had a great time that day, everything was too good, and I don’t know how this evening went by just nibbling on these little delights.

And every time I prepare this baba ghanoush, my memory always comes back to that evening.

Of course it was that day when I asked my friend how she had prepared this eggplant salad, and I was surprised that tahini could give all this difference in taste between a simple eggplant caviar and a baba ghanouj!

Of course you can prepare a large quantity of baba ghanouj.

My advice is to put in small quantities in airtight boxes, because this starter is eaten with sauce, ie by dipping the bread in the sauce.

And so as not to contaminate the whole quantity, we just serve what we are going to taste.

Tightly sealed cans with this salad can be kept cool for almost 5 days.

How to prepare baba ganoush?

Grill the eggplants

We start first by grilling the aubergines, whether on the stove or in the oven.

Of course, grilling the eggplants over the fire will give a more delicious and flavorful baba ganoush than using oven-roasted eggplants.

I don’t have gas at home, so I always roast the aubergines in the oven, either by turning on the grill from above, or cutting the aubergines and brushing with a little oil and baking.

the surface of the eggplant in contact with the oven dish will caramelize and you will have an extreme flavor.

Roasting them cut in half will make the eggplants cook faster and you won’t risk a whole eggplant exploding inside your oven.

Roast the eggplants until they melt well, remove from heat or oven, and place in a bag to then remove the skin quickly.

blend or mash the eggplants?

The question I am often asked: can we use the food processor to prepare the baba ganoush?

I’m a big fan of my food processor or thermomix, but they aren’t needed for this recipe.

The baba ganoush traditionally has a certain texture and the grilled eggplants become so tender that crushing them with the fork will give us the perfect texture, without having to dirty the robot!

After cleaning the aubergines, mash them with a fork. Add the tahini, lemon juice, crushed garlic, olive oil, salt and black pepper.

To serve:

Enjoy the baba ganoush with a good homemade pita bread, if you have time to prepare it.

Otherwise enjoy with baguette bread, matlouh or batbout.

  • 2 medium eggplant
  • 2 tablespoons of sesame cream tahina
  • 1/2 glass of lemon juice
  • 2 cloves of garlic
  • Salt and pepper
  • olive oil
  • Wash the eggplants. roast them either in the oven or on the grill;

  • when they have become tender, take them out of the oven and put them in a bag to sweat well.

  • remove the skin.

  • Mash the aubergines very well with a fork.

  • add the sesame cream and the rest of the ingredients.

  • mix with fork.

  • put in the serving dish, and decorate with olive oil.
