Hello everyone,

Here is the recipe for Bugnes of Lyonthem bugnes lyonnaises or even the Carnival donuts a recipe for fluffy bugnes as I learned it from my sister-in-law many years ago, I had kept the recipe on a piece of paper in my diary and came across it 2 years ago, what is -what I liked to do and redo the recipe, and today I share it with you on video.

It’s an ideal recipe for a snack, moreover my children like these fluffy bugnes or even the well-iced donuts. My husband especially loves the flour sfenj or his mother’s churros. Certainly I like donuts in all their forms, but I must admit that preparing a chocolate cake or a lemon cake takes me less time, hihihihi.

The preparation of the donuts is easy in itself, as one prepares a good homemade bread, what I do not like is especially the frying, especially when it is cold like in this period, and opening the window, it is like opening the door to Siberia.

When I find someone who does the frying, I confess that I could make donuts every day, hihihihi. In Algeria, it’s always my mother who does this frying chore, hihihih, but in Algeria, I have a large terrace, and a gas tripod, so all the smells of frying come out outside.

Despite all these drawbacks, as soon as my children ask me to make them bugnes or donuts, I embark on all the stages of these preparations without any hesitation, just to please them.

This bugnes recipe was tested and approved by several of my followers, always a great success, and the result of light, super airy bugnes, that you can eat 10 at a time without realizing it. So don’t come back and blame me if you gain weight!

I made the recipe with the Thermomix, just to go quickly with the kneading, but it’s an easy recipe to do with a kneader or by hand (in a bag as I prefer to do it) you can see this method in the recipe for donuts with applesauce.

in the Thermomix:

  • place the water, sugar and instant baker’s yeast in the Thermomix bowl.

  • activate at 37°C, 1 min, spoon speed.

  • add the eggs, orange blossom water, salt and flour,

  • activate the Thermomix kneading option for 5 minutes.

  • introduce the butter through the opening, in small quantities during the kneading.

  • remove the dough and scoop it into a ball. cover away from drafts and let double in volume.

  • take the dough, degas it on a floured space

  • Roll out the dough to about half a centimeter thick. Cut it in the shape of diamonds and make an incision in the center of the diamonds.

  • Heat the frying oil and immerse each bugne in it when it is hot. As soon as the bugnes rise to the surface, turn them over with a fork. As soon as they are golden, drain them with a slotted spoon and place them on a plate covered with absorbent paper.

  • Leave to cool and sprinkle with icing sugar before eating.
