Today we are going to see chicken tortillas the Mexican version with spice (your choice of course). These chicken and avocado wraps are one of my favorite recipes that I make very often.

First of all, it’s really easy to do. Second, it’s packed with healthy and nutritious ingredients. And third, it’s delicious!

Just a note, the real wraps are eaten as is just by putting the stuffing of your choice in the tortilla, but at home, I always have to put the tortilla in the pan just to give it a little crispy before stuffing it, including to people who like to pass the tortilla through the panini machine, personally I don’t like this method. So it’s up to you to see how you like to taste your tortillas.

How to make chicken wraps?

For this recipe, I like to sear the chicken in a pan or grill it. Feel free to use any chicken you have on hand: roasted, boiled, shredded, etc. Sometimes I use leftover whole roast chicken or pulled chicken (without BBQ sauce).

– Season the whole whites with just black pepper and salt, sear in the pan or grill on the barbecue, then cut into and stuff the tortillas

– Cut the chicken breast into pieces, season to taste, leave to marinate for at least 1 hour and sear in a pan.

My method of marinating chicken:

– Clean the chicken and cut into fairly thin strips.

– In a salad bowl, place the chicken strips,

– Add the crushed garlic, cumin, paprika, Fajitas spices, lemon juice and 1 tablespoon of oil.

– Cover and refrigerate for at least 2 hours.

What is the spice blend for Mexican fajitas?

I never miss this spice at home, because I use it a lot to prepare chicken wraps or Mexican fajitas.

You will find several brands on the market, I prefer the Schwartz fajita spices very fragrant, and in this brand here is what you will find inside:

Salt, sugar, dried onion, paprika, garlic powder, mustard flour, cayenne pepper, coriander powder, nutmeg powder, oregano, cinnamon powder, lemon zest powder.

But you can still make this homemade spice mix:

Yield: 3 tbsp. tablespoons fajita spices:

– 1 C. cornstarch
– 2 tbsp. chili powder
– 1 C. salt
– 1 C. paprika
– 1 C. sugar
– 1/2 c. onion powder
– 1/2 c. garlic powder
– 1/4 c. cayenne pepper
– 1/2 c. ground cumin

Ingredients for the chicken wraps:

– Chicken in thin strips and marinated.

– Wheat tortillas

– Homemade mayonnaise

– Green salad, and you can choose the salad of your choice, the crispiest and the best!

– Stir-fried green and red peppers.

– Red onion is the most delicious in wraps, but if you don’t like it fresh, you can skip it.

– fresh tomatoes cut into pieces and salted just a little.

– Avocado in strips sprinkled with a small drizzle of lemon juice.

– Fry the two peppers cut into strips in a little oil. If you don’t like the skin, cook the peppers whole, remove the skin and cut into strips.

– Cut the onions into strips, cut the tomatoes into slices and salt a little.

– Cut the avocado into strips and sprinkle with lemon juice.

– Now brown the chicken pieces in a little hot oil. Cook until the cooking sauce is well reduced.

– In an other pancake pan heat and give a little golden color to the tortillas.

– Cover the surface of the tortilla with a little mayonnaise, garnish with lettuce, sliced ​​fresh tomato, sliced ​​avocado, sliced ​​onions, peppers.

– Add the chicken pieces, then garnish with a drizzle of mayonnaise.

– Roll up the edges of the tortilla to cover the stuffing well and roll in a paper towel or baking paper if you don’t want the sauce to escape.
