This dish is one of my husband’s favourites, especially during Ramadan. With us it’s always accompanied by a good semolina bread, but of course you can make lots of other bread recipes like batbout or matlouh.

Tips for tasty and tender meat:

– We sometimes go about it at the last minute to prepare this dish, but my advice is to program this dish a little in advance. Personally I always prepare the chicken marinade in the evening, and I leave the chicken in there until the next day when I prepare it for the evening meal.

– Cooking the meat in the pressure cooker will be quick and you will have tender meat, but personally I always like to cook over low heat.

Even if I use the pressure cooker for cooking the chicken tagine, but I don’t cook under pressure, I use the pressure cooker because it’s a thick-bottomed pot, and I let the dish cook very slowly , just like cooking in the tagine.

In this way you will have a very melting meat and also very tasty.

– Even if you like ready-made candied lemon which is not as expensive as that, but I advise you to make homemade candied lemon, it is even tastier.

How to prepare lemon chicken?

Prepare the chicken marinade:

– Place the spices in a large bowl: rasse el hnout, saffron, black pepper, turmeric, ginger and stock cube, Add enough water to dilute everything.

– Marinate the whole chicken in this spice mixture, both under the skin and on the inside. Leave for at least 1 hour (overnight is better).

Cooking in the pressure cooker or in the tagine:

– heat some oil in a fairly large pot, the tajine or otherwise a cast iron casserole or a pressure cooker.

– Add the chicken to the hot oil.

– Peel the garlic and cut it into thin slices.

– Watch and turn the chicken so that it does not burn, and that it takes on a nice color on all sides. Add all the garlic on top.

– Peel and chop the onions. Add to the pot.

– Chop the bunch of coriander finely and add it to the pot.

– Cut the candied lemon in half, keep half and cut the other half into small cubes, add everything to the chicken.

– Leave to cook, stirring occasionally, between 1 and 1½ hours depending on the size of the chicken, adding a little water if necessary.

– When the chicken is cooked, remove it from the sauce.

– Put the sauce in a baking dish, add the cleaned and quartered potato to this sauce, add a little water and cook, covering the dish with aluminum foil. It is better to use a dish with lid.

If you use a tagine it’s even better because you don’t need to use the aluminum foil.

– When the potato is cooked, put the chicken back and let it take on a soft golden color.
