Hello everyone,

griwech el werka: Here is a delicious Algerian cake, a new model of griwech: griwech el werka, not as new as that, I know I saw this recipe a long time ago in one of my friends’ blogs, Lili from the blog with lili’s delights

In any case, to make these griwech el werka or griweches that I named griwech el werka (the leaf), I used the recipe from Oum Amani from the el djelfa forum.

The griwech el werka are a delight, except that for the realization, you will need a lot of time, and also it consumes a lot of dough. Yes they are super beautiful to present, but not really economical, when you want to have a large quantity, hihihihi.

Total time 45 min

  • 3 measures of flour 1 measure = 1 glass of 250 ml
  • 1/2 cornstarch measure
  • 1/2 smen measurement melted and cooled ghee
  • 1 Egg yolk
  • 1 pinch of salt
  • 1 vs vanilla coffee
  • 1 vs coffee baking powder
  • water + orange blossom water
  • oil for frying
  • honey and sesame seeds for garnish
  • Mix the flour, cornstarch, salt, vanilla and yeast in a large bowl

  • add the melted smen, and sand well between your hands.

  • incorporate the egg yolk and shortbread again.

  • pass the mixture through a sieve, it allows to have a more homogeneous mixture.

  • Now collect the mixture with the water and the orange blossom water to have a homogeneous paste.

  • Form balls and let them rest covered with cling film.

  • After resting, take a ball and roll it thinly using a rolling pin or by hand with cornstarch.

  • fold the dough, and spread it again, fold and spread again, to have flaky and crunchy griwechs in the mouth.

  • using a wheel, shape a rectangle almost 12 cm high,

  • draw 24 lines, spacing them almost 8 mm apart.

  • fold the dough on itself every 4 lines.

  • open the middle delicately (i.e. separate the 4 rows of line in two to form an “O”

  • turn the top of the rectangle on itself, to make it enter the opening (as if you are going to tie a knot)

  • Arrange the strips delicately by hand to give a beautiful puff pastry to your griwechs.

  • Continue like this until all the dough is used up.

  • Heat a bath of oil, then reduce the heat.

  • Cook the griwechs, watching them and turning them over for even cooking.

  • Dip the griwechs in honey, and garnish with toasted sesame seeds.
