I invite myself today on the blog of my dear Soulef, to share with you the recipe for this delicious Algerian cake khechkhach or khochkhach / Algerian gateauttes, which we inherited from our mothers and our grandmothers, el khechkhach , or khochkhach, or even wdinettes el qadhi, the atria..

it’s an Algerian cake that’s easy to make, too good, too crispy, super fragrant, very melting in the mouth. A delight! Some people make this recipe with eggs, but I don’t!

  • 2 measures of flour
    I use a 220ml glass
  • 1/2 measure of melted butter
  • 1 pinch of salt
  • zest of 1 lemon
  • 1 teaspoon of sugar
  • Orange tree Flower water
  • a little water
  • In a large salad bowl or terrine, mix the flour, butter, lemon zest and water + orange blossom water and knead until you obtain a firm dough.

  • Shape into balls and leave to cover for 1 hour.

  • Lower a ball to have a long rectangle.

  • Cut strips 3 cm wide and do this until the dough is used up.

  • Heat the frying oil, and reduce the heat.

  • Take a strip of dough, holding it higher and vertically, and dip almost 4 cm into the oil.

  • pour oil over it with a spoon so that it cooks and swells.

  • then fold it over itself, so that now another uncooked piece of dough is in the oil.

  • cover again with oil using a fork to cook the dough, and turn each time, to form a small roll in the frying oil. we do not roll the dough if it is not cooked.

  • Repeat this operation with the other strips of dough, until exhaustion. After baking, dip the cakes in honey. Leave to cool and serve with a good mint tea.
