Kitchen Love

  • 3 medium semolina measures
  • 1 vs. cubeb coffee powder
  • 1 vs. ground cinnamon
  • 1 vs. vanilla sugar
  • water + orange blossom water.
  • a pinch of salt.
  • 1 measure of fat: tant pour tant melted smen + oil
  • Work the date paste with the previously given ingredients, until a soft ball is obtained.

  • Form small balls of almost 10 g and set aside.

  • In a large terrine, pour the semolina, salt, cinnamon, vanilla and cubeb. Mix.

  • Make a fountain and pour the melted fat. Mix well so that the butter is well absorbed by the semolina. Let stand overnight.

  • the next day, take the dough again, sand again and pick it up with a mixture of water and orange blossom water.

  • form dumplings of almost 28 gr

  • stuff with the ball of date paste, and push into the moon cake mould.

  • let rest and dry the makrout between 1 and 5 hours depending on the temperature of the room.

  • fry in a very hot oil bath.

  • lower the heat when cooking.

  • when the makrout are well fried, soak them in honey flavored with orange blossom, and place in boxes.

  • you can also keep the makrout without putting them in honey, in a hermetically sealed box for 15 days.
