Hello everyone,

To be honest, I did not know this version of egg makrout known in the city of Tlemcen. I had seen this recipe for the first time on the Algerian TV channel: Samira tv, and I was very curious to make it, but the opportunity did not arise, then I saw it on the blog of Lyly ratatouilleand I fell once again under the urge to make this recipe.

I haven’t had the chance to make this recipe yet, although I tasted this Tlemcen makrout just recently in the Sbou3 that we had organized for a friend. One of the Algerians made this delight, and I admit that the texture of the makrout was a little different, I knew afterwards that it was egg makrout, verdict: too good, and super melting.

Regarding the recipe for this makrout from Tlemcen, it is a recipe that one of my friends and readers who liked to share it with us, My friend Hafred Kitchen. My friend took the recipe from Lyly’s ratatouille herself, and just like me, she agrees that this makrout is just to die for, I think the result is really well done.

Total time 25 min

  • 500 gr grilled medium semolina
  • 125 gr powdered sugar
  • 50 gr melted butter
  • 125 ml oil
  • 1/2 bowl of ground almonds
  • 3 or 4 eggs
  • 1 packet of vanilla
  • Lemon zest
  • Orange blossom water
  • Grill the semolina in the pan, let cool,
  • in a salad bowl, place the grilled semolina, add the sugar, vanilla, powdered almonds, lemon zest, melted butter, oil and 2 tablespoons of orange blossom water, mix well.
  • add the eggs one by one, until you have a dough that collects (3 in this recipe)
  • make small pieces in the shape of eggs, then fry them in a very hot oil bath
  • after cooking, pass the mkrouts in the honey
