Hello everyone,

The sun pie is a real delight and a real marvel to present! The good thing is that this preparation only takes about 25 minutes to make for a magical result! Looking at this sun pie, you’d think it’s something complex and would take hours to make, but honestly, it’s probably the easiest recipe on my blog.

I realized this tarte sun pesto for noon to accompany all that I had left in the fridge between salad, chorba and dip following a gourmet evening with friends.

I had 2 rolls of puff pastry which was about to expire and which I had planned to make some appetizers and appetizers with, but I didn’t want to waste too much especially since there was an afternoon BBQ before dinner.

I also had some pesto left over that I had made to make pesto eggplant rolls, a delight that didn’t last long with my guests!

At first I wanted to make pesto palms, then I thought of this sun pie, I really wanted to make this recipe, especially because I like the visuals, and the end result, plus it was request from my daughter who wanted to do the shaping.

She had fun making these pretty twists, I watched closely so that she didn’t pull the dough too much or that one twist was bigger than another, and in the end the sun pie would lose all its beauty. .

It must be said that when you have puff pastry at home, it’s not the ideas that will be lacking, nor the recipes… If it’s not in the salty version, it’s in the sweet version, and the result is always a delicious super tasty recipe.

Even if homemade puff pastry is a bit laborious work, but once you have good special puff pastry butter or otherwise at more than 80% fat (not margarine ok!) and once you get used to it, the everything becomes child’s play.

Personally when I find the right butter, I always prefer to make my homemade puff pastry, in the worst case I make the recipe for the express puff pastry, the latter but if it does not swell much during cooking, but it is incomparable crispiness.

How to prepare the sun pie?

For my sun pie today, I made a stuffing of pesto and gruyère, you can make a stuffing based on tomato sauce (which is a bit thick so that it doesn’t run too much in all directions) or of pesto rosso, this version personally I like it a lot, it’s just too too good.

– Place the 1 disk of puff pastry on baking paper and in an ovenproof mold (to avoid handling the pie too much after shaping

– Cover with pesto, evenly, it will be between 3 and 4 tablespoons depending on the size of the disc of the puff pastry.

– Add a little gruyère, or cheddar, not too much so that the pie does not lose its shape during cooking.

– Cover with the second disc of puff pastry.

– Place a glass in the middle of the pie to know how to cut the dough without reaching the end, and to have a uniform design.

– Start by cutting the disk into quarters, then each quarter into 4, so in total we will have 16 strips (the disk of my puff pastry is 24 cm, so I had fewer strips, but if your disk is larger , you can achieve more)

– Now take each strip, and turn it on itself twice, without pulling the dough so as not to risk cutting it from the base.

– Brush the top of the pie with the mixture of egg yolk and well-beaten liquid cream.

– Sprinkle with sesame seeds and nigella seeds.

Shaping and filling

– preheat the oven to 180°C
place the sun pie in the oven on the second shelf from below, lower the heat to 150°C (lit from below) and cook for 15 minutes
increase the temperature to 180°C (fan-assisted) and cook for 10 minutes until the dough takes on a nice color.
